Party Ryes

The first time I had this appetizer, I was at a Super Bowl party when I was in my twenties! One of my dad’s friends made this appetizer called Party Rye’s. It took me several years to try it, because by the time I went to get some, it was always gone…every single year I went to the party! You know you have a great tasting dish when it is gone within five minutes of putting it on table.  I asked her for the recipe and she was kind enough to give it to me. Unfortunately, it can be difficult to find the cocktail party ryes, because the company stopped making the little cocktail breads during the pandemic. If I cannot find them, I substitute regular rye bread. I either cut the bread in half, or I cut the crusts off and make it about 2 or 3 inches.  If you want, save the cut off bread pieces and make breadcrumbs. Just place the cut off crusts on a cookie sheet, bake for 5 to 8 minutes to dry them out a bit. Then blend them in a mini food chopper to have breadcrumbs. Reserve those crumbs for another use. Make sure the ham and Swiss cheese is thinly sliced so that it melts easily in the oven. For easier assembly, cut the ham and Swiss cheese to fit the size of bread that is cut-up.

I highly suggest using a meatloaf pan lined with foil is perfect because you can line them up back-to-back like a loaf of bread. Let’s get cooking!

 

 Ingredients

1 lb. butter softened

1 bunch green onions

2 Tablespoons poppy seeds

1 Tablespoon Dijon mustard

1 Tablespoon Honey

Sliced ham, thinly sliced

Sliced Swiss cheese, thinly sliced

½ of a loaf of rye bread or thin sliced rye bread, cut in half or cut with the crusts cut off and cut into 2 or 3-inch squares

Instructions

Combine the softened butter, green onions, poppy seeds, Dijon mustard, and honey. Mix well.  Set aside. Take the bread and make little sandwiches with the ham and Swiss cheese, folding and tucking in so that ham and cheese do not go outside the bread.  You might want to cut the ham and cheese to the shape of the bread to make it easier to assemble each sandwich. Line each sandwich back-to-back in a foil-lined meatloaf pan. Pour the butter, honey, mustard sauce over the top of the sandwiches. Fold or top with foil. Bake at 325 degrees for 30 to 45 minutes. Serve immediately.
