Angel Chicken

While this recipe makes my stomach happy, it also brings my heart joy every time I make it. A friend of mine had brought me this oh-so delicious dish after I had my second daughter, Anna Marie. She had brought it over in her slow cooker and we had it for dinner that night. It was amazing! The next night, I heated up the base of the slow cooker in the microwave.  Seemed to go right, since it looked just like mine.  However, as my husband, older daughter, and I were eating it, we noticed a stringy consistency in the sauce that was not there the night before.  It was almost like cheese when its gooey even though there is only cream cheese in this recipe and not real cheese. I was puzzled. I got up and started to inspect the slow cooker bowl and lid to see what could be the issue.  And at last, I found it!  The lid to her slow cooker looked similar to mine, but her handle was different in that the cover has a metal screw in it. The glue had melted in the microwave and released the screw which fell into the slow cooker; luckily, it had not ended up on our plate yet! Needless to say, we ended up throwing out that tasty dish…ugh!  I gave her my slow cooker lid and bought a new slow cooker lid and was so embarrassed I didn’t tell her for years! Luckily, she laughed when I did! Kathleen Stroud was always a delight and seemed to never let anything bother her. She always had such good advice and had an elegant and classy way about her.  Unfortunately, she passed away from cancer a few years ago. I am grateful that every time I make this recipe, I remember her and the funny story that accompanied this dish! She will always be missed! 8 skinless, boneless chicken breast halves (about 1 ½ lbs.)

½  cup butter

2 (0.7 oz.) pkg. dry Italian salad dressing mix

2 (10¾ oz.) can condensed golden mushroom soup

¾  cup dry white wine

1 (8 oz.) tub cream cheese with chives and onions

Hot cooked angel hair pasta

Snipped fresh chives (optional)

 

Cut chicken breast halves into 2 or 3 pieces each.  Place chicken in a slow cooker.  Place butter, soup, and cream cheese in a microwave-safe bowl.  Microwave on 50% power 2 to 3 minutes, until ingredients soften.  Add salad dressing mix and wine; stir to combine.  Pour over the chicken.  Cover and cook on LOW 4 to 5 hours.  Serve chicken and sauce over hot cooked pasta.  Sprinkle with chives.  

                              

Serve with fresh, steamed broccoli and/or a garden salad.

Ingredients

  • 8 skinless, boneless chicken breast halves
  • 1/2 cup butter
  • 2 0.7 oz. packages of dry Italian salad dressing mix
  • 2 10 3/4 oz/ can condensed golden mushroom soup
  • 3/4 cup dry white wine
  • 1 8 oz. tub cream cheese with chives and onions
  • Hot cooked angel hair pasta
  • Snipped fresh chives (optional)

Instructions

  1. Cut chicken breast halves into 2 or 3 pieces each.
  2. Place chicken in a slow cooker.
  3. Place butter, soup and cream cheese in a microwave-safe bowl.
  4. Microwave on 50% power for 2 to 3 minutes or until ingredients soften.
  5. Add salad dressing mix and wine. Stir to combine.
  6. Pour over the chicken.
  7. Cover and cook on LOW 4 to 5 hours.
  8. When ready to eat, cook pasta according to package directions.
  9. Serve chicken and sauce over hot cooked pasta. Sprinkle with chives.
