GG’s Lemon Bundt Cake

Grandparents, aunts, and moms all have delicious, wonderful recipes that they can pass down to us. I love that! I absolutely loved my husband’s grandmother, Marion.  She was like a third grandma to me.  She was not your typical grandma.  She adored her husband, played golf, and worked in Buckhead at her son’s general contracting company up until she died at the age of 81.  She was always dressed with hair and make-up done.  I always remember her smiling, laughing, happy and an absolute joy! I would stop by her house often and we would chitchat a bit before I went off to work.  I have to include this funny story of her because it is one of the fondest memories of her.  I had sold Mary Kay and since she was in her mid to late 70’s, Marion wanted something for her legs that would give them color since she played golf every week.  The older women at the club, including grandma, wore pantyhose because all of their legs were very pale and they wanted color while on the golf course. However, living in Georgia, it was hot and humid.  Talk about miserable! So one day, she asked me if Mary Kay had anything for legs.  I said, of course they do!  We have Sunless Tanning Lotion that will tan your legs and it will look natural if you use the buffing cream, which will help remove the dead skin so you do not turn orange.  Grandma bought four bottles that day, two of the Sunless Tanning Lotion and two bottles of the buffing cream.  She would use that at least four times a week.  Let me tell you that she had the tannest and the hottest little legs of anyone of any age.  She looked fabulous!  All her friends bought them as well and they were ALL thrilled not having to wear pantyhose anymore!   She was a great cook as well.  I remember her cooking prime rib, making dips, and many casseroles!  Later, we referred to her as G.G., which stood for great grandma because Cierra was the first great grandchild and could not pronounce her Gr sounds.  She made a lemon cake that was so moist and lemony.  It was NOT a pound cake, but a very moist, lemon flavored topped with a sweet glaze Bundt cake. It was my husband’s favorite cake and has since become one of mine, too! He loves anything lemon.  I made it for him for his birthdays, anniversaries, and Valentine’s Day. She taught me how to make it when I was a teenager when my husband and I were dating. Over the past 35 years, I have made this cake so many times that I have lost count. It is simple to make since you use a boxed cake mix.  I have always used the Bundt pan (the one with the hole in the middle) because it makes the cake look so pretty and delectable.  

Lemon Bundt Cake

Cooking Spray

1 box Duncan Hines Lemon Supreme cake mix

1 small package Jell-O instant lemon pudding

¾ vegetable oil

4 eggs

¼ cup water

1 cup powdered sugar

4 to 5 teaspoons lemon juice

Spray Bundt pan with cooking spray. Set aside. Combine cake mix, Jell-O mix, vegetable oil, eggs and water. Beat at low speed for 30 seconds until mixture is moist and combined. Mix at medium speed for 2 minutes. The mixture will be a bit thicker than normal cake mixes. Pour mixture into a greased Bundt pan. Bake at 350° for 45 to 50 minutes.  Everyone’s oven is different, so watch the time; you don’t want your cake to be burned.  When the cake is done, the cake should be light golden brown and pull away from sides of the pan.  Test the center of the cake by inserting a toothpick; if it comes out clean, the cake is done.

While the cake is baking, combine the powdered sugar and lemon juice in a glass, measuring cup.  It is easier to drizzle the glaze from something the pours. Mixture should not be too thick and not too thin.  A tad thicker consistency would be better, so that it does not run off the cake; may need to add more powdered sugar or lemon juice, a little at a time.  When the cake is done, take a plate (usually the one that will you will be serving it on) and put it over the cake pan and flip the cake onto the plate.  Make sure you use potholders because it will be hot! Drizzle the lemon-sugar over the cake while it is still warm.  Cool completely; then serve.
