English Muffin Pizzas

What’s the classic American take on a quick and easy dinner? PIZZA! However, my version has a little bit of a twist: an English muffin is the crust! Everyone gets to customize their pizza into how they want it! It gives you the opportunity to get creative with your meals; whether its a classic cheese and pepperoni pizza or trying something outside the box like barbecue chicken pizza. Plus, its great for all ages! When my girls were little and would have their friends spend the night, this would always be my go-to because even the pickiest eaters could find something they liked and I could stay on budget. When they were in college, this meal was great because the inexpensive ingredients could be kept in the pantry so that in between classes or studying they could have a delicious home cooked meal. Not to mention, what college kid doesn't like pizza! On that note, let’s get cooking!

English Muffin Pizzas

1 package English Muffins

1 jar of pizza sauce or spaghetti sauce

1 package of pepperoni

Mozzarella cheese and/or parmesan cheese (to your liking)

1/8 teaspoon Oregano, basil, or crushed red pepper, dried (optional)

Suggested toppings (but feel free to get creative!):

  • Canned mushrooms, drained or fresh mushrooms, sliced thin

  • Chopped onions (about 1 onion)

  • Chopped green peppers (1 green pepper)

  • Diced black olives (1 small can), chopped banana peppers, diced anchovies, or your choice of your favorite toppings.

 

Preheat oven to 350°. Decide how many each person wants to make – 2 halves, 4 halves (for adults - usually two to three per person.)  Then, take out the number of English muffins and halve them.  If you are only using a few, then close the bag tightly and save for another use. Place each half of an English muffin on a cookie sheet.  Top with pizza sauce.   Have each person top their own with their favorite toppings.    Top with cheese.  Bake for 9 to 11 minutes in the oven or until the sides are golden and the cheese is melted. Serve immediately.  For a complete meal, serve with a bagged salad kit.
